Chawal Ki Kheer aur Puri ( Rice Pudding)


 Kheer now a days is prepare in many version.

In Hyderabadi Version its called
Gil e- firdaus (a kheer made of Bottle gourd - means clay of paradise)
and Similar dessert variously called Fir-ni/Phir-nee ( Rice Pudding),
 its quite popular recipe and made during festival and wedding.


Traditionally Kheer is served in chilled in a clay cups /earthen bowl- (Mitti ka Matkas).



In Hyderabadi house usually 
its serve with Puri -Sadi Puri/Khopurai ki  Puri (Chobay ki puri / Puran ke poori (chana dal,ghee,sugar,khoa and dried nuts)
during festival /party/wedding
( small function  party -Sanchak-maanjaye- Jumagi :)


Ingredients For  Chawal ki Kheer (Rice Kheer):

1 litre Milk
1/3 Cup Rice Powder ( powder) soaked rice 1- 2 hours / dried the rice grind into powder
1 cup sugar
4 cardamom (elaichis)
3 tbsp  Nylon Sago (Subhudhana)- Soaked overnight/soaked for 1-2 hours (optional)
1 big pinch Saffron threads (soaked into a hot milk)


For Garnishing :

 Slices Almonds, Pistachios & Cashews fry until golden,about 3 minutes.
Khoa (optional)



Method
  
Wash the rice and soak it in surplus water for about 1-2 hours and drain the rice and spread the rice on a paper towel / in a cotton cloth  and allow to dry out for an 30- 45 minutes.
once the rice is dried  then grind the rice into powder.


In a large non-stick saucepan at medium heat, Add milk Allow to cook in low heat for 10 minutes.
Add crush cardamom & saffron let the milk  cook for 20 minutes,

Then Add  the sabudhana and cook till it becomes translucent ,then add the sugar and stir till it dissolves,
meanwhile  In a small bowl add Rice powder in a small amount of of milk/water, mix it well without any lumps,
Then Add mixture (Rice paste) into the boiling milk and keep stirring till its creamy and thicken on a low flame.

Remove from the heat when it reaches the desired consistency.
Allow the kheer to thoroughly cool.

Serve with Sadi Puri/Khopurai ki  Puri (Chobay ki puri)/ warm or cool and Enjoy it :)



The method for Preparing Puri :

For Dough:

2 Cup  Maida 
2 tbsp  Ghee
1 Cup warm Milk
1 pinch soda
2 cups Oil
1 pinch salt

For Filling :

Chobey Ke puri (Coconut stuffed Puri) 

1 Cup Desiccated Coconut
1/2 Cup Sugar
4 Cardamom (elaichis)
3 tbsp Slices Almonds,Pistachios and  Cashew
2 tbsp Khoa 


Puran Puri (Chana Dal stuffed Puri)


1/2 cup Chana Dal (Bengal gram)

1/2 tbsp Ghee 
1/2 Cup Sugar
4 Crush Cardamom (elaichis)
3 tbsp Slices Almonds,Pistachios and  Cashew


Method for preparation :

In a  large bowl, add flour, baking soda,salt and mix well and make a well in the centre, and add the warm milk,then knead thoroughly with fingers until the mixture is combined and add ghee then turn the dough onto the floured surface and knead until smooth and elastic.
Then place the dough in a bowl  and cover the bowl with the plastic wrap and leave for marinate 1/2 - 1 hours .

Method for Preparing Chobey Ke puri (Coconut stuffed Puri) :


In the  Meanwhile Prepare the Coconut stuffed (Choba means grated coconut) , In small bowl add the desiccated Coconut,sugar, crushed cardamom,Slices Almonds,Pistachios & Cashew and khoa mix well keep aside.


Method for Preparing Puran Puri (Chana Dal stuffed Puri):


In a pressure cooker at medium high heat, add water and Chana dal, Let pressure cook for about 15 minutes until the lentil is tender(paste).Remove it.In a non-stick saucepan/Khadhai  add ghee at medium heat.Once the ghee is melt add dal and sugar,crushed cardamom, stir it  well Then add Almonds,Pistachios and  Cashew and mix well keep aside.

Now lightly flour dough on the work surface and roll out on all the sides evenly and add flour as needed and add 2 tbsp of coconut mixture in the centre of the dough and brush/ use finger with water around then Fold it over, to make a half moon shape then Press edges together with finger/fork to seal.


In the Meanwhile,In a non-stick pan add oil at medium heat.Then fry the dough Let it fry both the sides until it is golden brown, about 3-5 minutes remove from the heat,and drain on the paper towel.

Then serve with Kheer - and enjoy the chobey k puri( coconut stuffed puri)
