Hyderabadi Chicken Tikka Masala


Ingredients:
For  Marinading Chicken 
1/2 kg Boneless/ Bone Chicken
1 Onion 
1 tsp Red Chili Powder
1/4 tsp Turmeric Powder
1 tsp Ginger and Garlic paste
1/4 tsp Gram Masala 
2 tbsp  Shan Chicken Tikka Masala
2 pinch  Red Food color
2 tbsp Lemon
4 tsp Oil 

For Garnish 

3 tbsp, finely chopped Coriander
3 tbsp, finely chopped Mint
Salt to taste

Method:
In a mixing bowl, Add ginger-garlic paste,Red chilli powder,
Turmeric powder,Garam masala,salt,lemon juice,Chicken Tikka Masala
then mix it all well,leaves the chicken. Cover the bowl with a plastic wrap.Let the chicken marinate for about 1-2 hours in the refrigerator.

Method For Preparing Chicken Tikka

In a large non-stick saucepan/Khadhai  at medium heat, add  oil.Add (onion finely chopped) stir for 10-15 minutes to golden brown.Reduce the heat and add chicken and mix well. Now after a couple of minutes add Red food color mix well,  Do not cook on a high heat,simmer heat and cover the pan leave till done.
At this stage there will be some liquid from the chicken in the pan. You need to now allow the chicken to cook in its own liquid until all the liquid evaporates.Then leave it for low heat till the thin layer of oil appears on the bottom surface and cover the pan leave till the gravy is thick,stir every 10 minutes.Wait until fully tender. Remove pan from heat.

Note: You can either go for step 1 or step 2

For Step1:
Separately heat a piece of Coal until red hot and place it in a small inside the pot.Pour one tbsp ghee/butter over it and immediately cover the pot.Open after few minutes.

For Step2:

In a non-stick saucepan/Khadhai  at medium heat, put each chicken position heat evenly on side until very light brown and crispy .
Remove from the pan and mix into gravy.
Garnished with fresh coriander leaves and mint leaves.
Enjoy it..!!
