Hyderabadi Chawal ki Kadhi



Ingredients:

1/2 kg Lamb/Beef Meat
2 Onions (finely chopped)
3 Tomato (finely chopped)
3 tbsp Rice Powder ( powder) soaked rice 1- 2 hours / dried the rice grind into powder
1  tbsp Ginger garlic paste
1  tbsp Red chilli powder
¼ tbsp Turmeric powder
1 tbsp Coriander powder
2 green chillies finely chopped
Raw Tamarind juice (imli ka khata)/2 tbsp Lemon juice
2-3 Bay leaves
Salt – to taste
1/2 Cup Oil

For Roasted and Ground Masala

1 tbsp Cumin seeds powder (zeera)
1 tbsp Nigella seed (Kalaunji)- optional                                   
1/2 Fenugreek seeds ( methi dana)- optional

For seasoning (Baghar)

6 tbsp Oil
2  tbsp Cumin seeds
2 Garlic Cloves- optional 
2 Dried Red/Green chillies  
6-8 Curry Leaves

For Garnish
Coriander leaves (finely chopped )
Mint leaves (finely chopped)


Method

Wash the rice and soak it in surplus water for about 1-2 hours and drain the rice and spread the rice on a paper towel / in a cotton cloth  and allow to dry out for an 30- 45 minutes.once the rice is dried  then grind the rice into powder.

Clean and wash the mutton pieces, add ginger and garlic paste & onion, tomatoes,red chilli powder & turmeric, oil  and pressure cook  for 3/4 whistles without adding too much of water,until the meat is tender, then keep aside.

Meanwhile,In a large non-stick saucepan/Khadhai at medium heat, Dry Roast cumin seeds, for 1 minute-or till slightly darker in colour and then grind to a fine smooth paste keep aside.

Then  add  Tamarind juice (imli ka khata),lemon juice,roasted ground masala and bay leaves, Let it cook for about 10 minutes.In a small bowl add rice powder in a small amount water, mix it well without any lumps,add rice paste into and keep stirring.Then add green chilli, salt to taste & till its creamy and thicken on a low flame.

Meanwhile In a saucepan add oil at medium high heat,add  cumin seeds, black mustard seeds(optional), after few seconds add  dried red /green chillies, curry leaves stir for few seconds /until the seeds crackle. 

Then pour the Baghar over the kadhi and let it cook for 5 minutes & remove from the heat.

Garnish with coriander,mint leaves.

when i read the name of the post...i thought it's a rice dish.. :) and i was thinking how cum thr is a veg recipe here...but awesome dear as always!
