Hyderabadi Subzi Diwani Handi







Hyderabadi vegetarian  Salan " Subzi Diwani Handi"  -a mixture of vegetable prepare in  a handi  (shallow wide flat bottomed handi)  The  Subzi is sealed  and cook in a low heat in the Handi .

Ingredients:

2 Onions (finely chopped)
10-12 French Beans (finely chopped-)
2 Carrot (Finely chopped)
1/2 cup Green Peas
1-2   Small/Baby Eggplant/Brinjal-(finely chopped)
1 Bunch Fenugreek Leaves(Methi) -Finely chopped
1  tbsp Ginger garlic paste
1  tbsp Red chilli powder
¼ tbsp Turmeric powder
2 green chillies (finely chopped)
2 tbsp Lemon juice
Salt – to taste
6 tbsp Oil

For Garnish
Coriander leaves (finely chopped )
Mint leaves (finely chopped)


Method

In a large non-stick saucepan/Handi add oil at medium heat,add  finely chopped onion  stir until tender and  translucent, then add ginger garlic paste, stir for few seconds, 

Then add red chilli powder, turmeric powder,stir for few seconds, Add the chopped vegetable mix well  without adding too much of water,until it's tender.

Then Add  salt to taste,lemon juice ,green chillies and stir often to prevent burning,if required,sprinkle a little water from time to time prevent the vegetable from burning.

Do not cook on a high heat,simmer heat and add  coriander and mint leaves cover the pan leave for 10-15 minutes until the vegetable is tender.

Garnish with coriander leaves and mint leaves.

Server with Hot Paratahas,Naan,Bakarkhani,Stem rice.

You have a lovely blog here.. I love Hyderabadi Cuisine, especially Biryani. My sister just made me VEggie Hyderabadi Biryani, will have to get the recipe from her.
In any case.. very unique dish, it kinda reminds me of Navratan Korma, a mix of everything, but without the cream. :)
