Kheemey-ki-Luqmi (Stuffed Pastry with Mince)




Luqmi / Lukhmi  is a Traditional and Authentic Savoury Hyderabadi Starter Snack's Similar version of Samosa with a crust pastry and filled with mince in center and shaped into a flat square patty.

In hyderabadi wedding or in other celebration Lukhmi is typically served as a starter.

The Snack is prepare with (Refined Flour-Maida) dough combine in yoghurt,milk by mixing flour with a small amount of water and Ghee until it becomes very smooth, and stuffed with minced.

The method for Preparing For Dough:

2 Cup Refined Flour (Maida )
1/2 cup  Semolina or Rava 
¼  cup yoghurt 
2 tbsp  Ghee
 ¼  cup warm Milk
1 tbsp Black cumin seeds (Zeera)
1 pinch soda
2 cups Oil
1 pinch salt

For Filling :

1/2 kg Lamb/Beef/chicken Mince
1 Onions (finely chopped)
3-4 Green Chilli (finely chopped)
Coriander leaves (finely chopped)
Mint Leaves (finely chopped)
1 tbsp Ginger and  Garlic paste
1 tbsp Red chilli powder
¼  tbsp Turmeric powder
1 tbsp Gram masala
1 tbsp Lemon juice
Salt to taste
5 tbsp Oil 

Method for Dough :

In a  large bowl,  add flour, semolina or rava , cumin seeds, baking soda, salt and mix well and make a well in the centre, and add  yoghurt, warm milk, then knead thoroughly with fingers until the mixture is combined and add ghee then turn the dough onto the floured surface and knead until smooth and elastic. Then place the dough in a bowl  and cover the bowl with the plastic wrap and leave for 1/2 - 1 hours.




In the Meanwhile Prepare the Mince stuffed

Wash mince and drain thoroughly.
In a large non-stick saucepan/Khadhai add oil at medium heat, add mince and fry till they change colour. Add ginger and garlic pastes, fry for 1 minute, add red chilli powder, turmeric powder, salt, green chilli  powder, garam masala powder, coriander leaves, mint leaves and mix well.

At this stage there will be some liquid from the mince in the pan. You need to now allow the mince to cook in its own liquid until all the liquid evaporates. Now add onion stir for 5 minutes and cover the pan and leave for 5 minutes.Then remove from the heat.Keep aside.

Now lightly flour dough on the work surface and roll out on all the sides evenly and add flour as needed and Cut dough into squares with a cutter. Fill 1 tbsp of mince mixture in the centre of the dough and brush or use finger with water or oil around then cover or fold it over, to make into a flat square shape then press edges together with finger/fork to seal.



In a non-stick pan add oil at medium heat.Then fry the dough.
Let it fry both the sides until it is golden brown, about 3-5 minutes remove from the heat and drain on the paper towel.
